Abstract This papers presents a measurement setup which combines three different methods indicating the moisture fraction of sample. is managed by measuring weight, absolute electrical impedance with harmonic excitation between 10 Hz to 1000 and surface reflectance sample spectroscope 160nm 1100nm. The measurements are carried out over 50 h every 5 min using piece porcine meat. results show clear evidences that dehydration occurs on until water inside diffused completely. can be seen significant wavelengths absorption bands in reflected spectrum like 540nm, 575nm 970nm (oxyhaemobglobin water) both set into ratio weight loss
